Fish Porridge with Soybean Paste Sauce Recipe


300 g fish fillet
300 g fish bones
20 g ginger
20 g celery
1 cup rice
1 teaspoon fish sauce
1 teaspoon light soy sauce
1 teaspoon ground pepper

Soybean Paste Sauce
1 tablespoon coriander root
1 tablespoon garlic
1/2 tablespoon galangal
1 teaspoon red chili, to taste
2 tablespoons soybean paste
1/2 tablespoon lime juice
1 teaspoon vinegar
1 teaspoon sugar
1 teaspoon light soy sauce
1/8 teaspoon dark soy sauce

Fish Porridge with Soybean Paste Sauce

How to Cook

1. Make a broth by boiling fish bones with water and sliced ginger.
2. Make porridge by boiling rice with water and sliced galangal.
3. Cut fish fillet into strips and cook in boiling water. Cut ginger in thin strips and fry in oil until golden.
4. Prepare soybean paste sauce by pounding coriander root, garlic, galangal and red chili in a mortar. Add soybean paste and stir to combine. Season with lime juice, vinegar, sugar, light soy sauce and dark soy sauce.
5. Season the porridge with fish sauce, light soy sauce and ground pepper.
6. Assemble the dish by adding the porridge, fish broth, boiled fish fillet, celery and fried ginger. Serve with soybean paste sauce. Enjoy!
